Operating Instructions
Ingredients required for one batch (100 kg minced mixture):
• 100 kg minced mixture containing meat + fat + onion + vegetables (as per factory specifications)
• 1 bag of Hawawshi Recipe – 6 kg
Processing Steps:
Step 1: Preparing the Minced Mixture:
1. Prepare meat, fat, onion, and fresh vegetables according to the product specification.
2. Grind all ingredients together using an industrial meat grinder to obtain a uniform minced mixture with a total weight of 100 kg.
Step 2: Seasoning:
In case of mechanical mixing
1. Transfer the 100 kg minced mixture into an industrial mixer.
2. While the mixer is running, empty the entire contents of the Hawawshi spice sack into the mixer.
3. Continue mixing for 5 to 10 minutes until the spice blend is evenly distributed and a consistent dough is formed.
In case of manual mixing
1. Gradually add the spice mix while manually kneading the mixture thoroughly to ensure even distribution.
2. It is recommended to regrind the mixture after seasoning to ensure better integration and flavor consistency.
Step 3: Portioning and Storage:
1. Divide the seasoned Hawawshi mixture into bags based on the required weight (as per factory specs).
2. Store the mixture under chilled conditions (0–5°C) until it is used for stuffing into bread.
Technical Tips for Enhanced Product Quality:
• Always use fresh ingredients to ensure flavor and texture quality.
• The ratio of vegetables and fat can be adjusted according to market preference or product specification.
• It is recommended to portion and pack the mixture immediately after seasoning to preserve its properties.
