Operating Instructions
Required Ingredients for One Batch (100 kg minced meat):
• 1 bag of Beef Burger Recipe – 6 kg
• 12 kg cold water
• 100 kg minced meat (beef or a custom blend as per factory specifications)
Processing Steps:
Step 1: Brine Preparation:
1. Empty the full contents of the seasoning bag into 12 kg of cold water (temperature below 5°C).
2. Mix thoroughly for 2 minutes using a mixer or whisk until all components are fully dissolved and the solution is homogeneous.
Step 2: Mixing:
1. Add the prepared solution directly to the 100 kg of minced meat.
2. Blend the mixture using an industrial mixer (Mixer or Bowl Chopper) until a uniform and cohesive dough is obtained.
1. Optional: For enhanced consistency and texture, the mix can be passed through a grinder (5 mm plate or larger) after blending.
Step 3: Forming:
1. Feed the seasoned mix into a burger forming machine to produce patties according to product specifications (thickness, weight, shape).
2. If using a manual forming process, first divide the mix into equal balls by weight, then shape into patties.
3. Allow the patties to rest at a low temperature (0 to 5°C) for proper setting (pre-curing), then proceed to freezing.
Technical Tips for Enhanced Product Quality:
1. Pre-Curing the Meat:
• Cut fresh meat into cubes and freeze at -5°C or lower for at least 4 hours before grinding.
• Grind coarsely using a 5–8 mm plate.
• This step improves final dough cohesion and minimizes fat separation during processing.
2. Optional Use of Textured Soy (for texture enhancement and/or cost optimization):
• Soak 1 kg of textured soy in 2 kg of cold water for 12 hours.
• Mince the soaked soy together with the meat twice (First before seasoning then second after blending) This ensures full integration and a consistent product texture.
