Operating Instructions
Standard Batch Size: 100 kg Seafood
Required Ingredients:
• 1 bag (6 kg) Fried Seafood Seasoning
• 4 L cooking oil
• 3 L vinegar
• 4 L chilled water (≤ 5°C)
• 6 kg minced garlic
• Wheat flour, cornstarch, baking powder for coating
• 100 kg seafood (fish, shrimp, or mixed seafood)
Processing Steps:
Step 1: Marinade Preparation:
1. In a bowl or industrial blender, combine: 4 L oil + 2 L vinegar + 4 L chilled water + 6 kg minced garlic.
2. Add the full content of the 6 kg seasoning bag and mix thoroughly until homogeneous.
3. Store the prepared marinade in refrigeration until use (can be kept up to 4 days).
Step 2: Marinating the Seafood:
1. Use approximately 2 kg of prepared marinade to season 10 kg of seafood.
2. The total prepared marinade is sufficient to marinate 100 kg of seafood.

Step 3: Coating:
1. In a separate container, mix wheat flour, corn starch, and baking powder.
2. Coat the marinated seafood thoroughly with the dry mixture until fully covered then fry in medium-hot oil until golden and crispy.
Technical Tips for Enhanced Product Quality:
• After marination, divide seafood into portion bags (vacuum sealing is recommended).
• Keep marinated seafood refrigerated until coating and frying
